Don't forget SHELLFISH, it was considered peasant food because of its extreme over abundance, and was considered a sign of extreme poverty. It was often only fed to slaves and prisoners, in several cases being ruled as inhumane to feed to people more than a couple times a week.

Two others are lobster and oysters. In colonial times, lobster was a poor person's food, in fact, they fed it to prisoners because it was so cheap and plentiful. Oysters were in the same category, a street food or poor person's food. Something easily obtainable, cheap, and plentiful.

Originally, sushi was just the fish, and the rice was just a fermentation preservative. So that's where the vinegar comes from. Fresh fish was inserted into a pack of cooked vinegared rice, so fish would be sort of half-coolked, and the heat would cause it to grow the lactic acid bacteria so it ferments safely. And when eating it was plucked out of the now-funky-smelling pile of rice, and you'd just eat the fermented fish meat. All the rice was just thrown away. And then THAT turned into a form where you eat the fish and rice together, and the fish would become less and less fermented as sushi evolved -- which we arrive at the modern form of sushi... <br><br>(ps) ... Canoe-san.. what would be the point of that norimaki mat, if you're not using it to roll the norimaki ...

I would say oil was expensive, but animal fat was quite common because back in the day they used almost every part of an animal.
