I’m blown away by their business model… cooks as waiters does MORE than balance the monetary divide - it trains the cooks to understand the pressures on the servers as well as celebrates the skill of the cooks on the floor with the customers, directly.. how satisfying as well as fair!

David is the man. I had the pleasure of working with him and his team a few times now. Totally in the same idea of only BOH to do every motion in our restaurants.

Awesome to see Portuguese food getting some love. I dig that the chefs swap places and schedules every week. I bet they love that flexibility.

Not just any Portuguese Olive Oil, it's Herdade do Esporao. An amazing oil with a beautiful nutty aroma and some nice spicy notes. One comment I would make is that he should have said "Iberian Peninsula" instead of "Spanish Peninsula", I'm sure it was just a small mistake on their end that didn't warrant a reshoot but it's important to understand that it's not just Spain in that mass of land it's also his native Portugal.

Great to see portuguse food highlighted outside of Portugal, I feel that our gastronomy is SOO underrated.

Love the way that the Chef's work both in the kitchen and front of house. He seems to be switched on dude, who has a good moral compass/ethics. Not exactly common in our industry. Cheers to Eater for serving up another excellent vid about another excellent and quirky kitchen!

One of my absolute favorite restaurants anywhere. Just truly outstanding food, and a super cool atmosphere. To those complaining about it not being as authentic as it should be, whatever. If you need to call it "Portuguese-inspired" then so be it, but the food is incredible. 110% worth the money, and worth a special trip
