Pellets: Bear Mountain is my goto after doing my own experiments (with ribs every night over a week). Note that it's not just the brand but the type of pellet. Mesquite is quite strong compared to the oak, hickory, etc even on a pellet grill. Beyond the common wood pellets there is Knotty Wood which uses almond and plum wood. That boosts the smoke flavor but has a lot more ash/clinkers and it's more expensive. Recently I found pecan shell pellets. Again these are expensive but give off more smoke flavor. For my typical brisket cook I will put a layer of the pecan shell and/or the Knotty wood that will last 4-6hrs followed by Bear Mountain oak. This gives me more smoke flavor while the meat is still taking on smoke but using the more economical pellets for the remaining time. I've never had any luck with smoke tubes. YMMV.

I have had different smokers over the past 40 years. Charcoal and propane and did some amazing food from brisket, ribs, cured and smoked pork belly and ham. I just got my first pellet grill a Recteq 1600. Love it but what you say is spot on!

Can confirm on the typhur probes. I have the exact same probe set up as yours. Last month, my #1 probe went bad, and Typhur had a probe in the mail the next day. Their customer service is top shelf.
