The smoke should be the star of the show, and that show ends when you wrap them, especially if we’re talking pellet smokers, which don’t produce the stick-burning type of smoke.

I like the "cook nekkid, glaze, wrap, let rest for an hour or so" method that Bar-A and Goldee's use.

I still wrap mine at the 4 hour mark per Jeremy Yoder's method using smoked pork lard. I think it helps the fibers relax a little. Nothing wrong with not wrapping, however.

I still like to wrap but l really cut back on the wrapped time. Never more than an hour.

I did some ribs direct heat in a cabinet smoker. I hung them up by hooks. Trying to duplicate the barrel smoker. Got to say it didn't disappoint. Get or better yet make/assemble a barrel smoker. Then do some ribs on it.

Interesting. I wrap baby back ribs in paper since they are lean, they stay juicy when wrapped. I usually don't wrap spare ribs, I figure they are fatty and juicy enough, not wrapping them they don't taste like steamed meat. I'll have to give wrapped a chance.

I'm definitely a no wrap guy! Me and my wife like bite off the bone ribs. You get a better bark and better fat rendering more smoke flavor imo. Wrapping ribs you can easily over cook them and get mushy ribs. I also think on a pellet smoker no wrap is a better way to go.

Jake, I know you don’t need another grill but do yourself a favor and get a drum smoker. <br>Direct heat ribs (no diffuser), at 275 to 300… you’ll thank me later
