Grits was food we were raised on here in Louisiana. I ate it as a child for breakfast and as an adult I now consider it delicious with a pinch of salt and a little cream and butter.

When the Teamsters went on strike, our table told the story—pinto beans and cornbread for days. Hard times, simple meals. Funny thing is, I still love pinto beans.

Janet Spaeth (?) wrote articles about the myth of living on the prairie: the malnutrition, isolation, fear a crop would fail, wild animals; if your husband went hunting, would he return?

The Little House On The Priairie Cookbook also discusses cookinng and meals during Laura Ingalls life. on the Great Plains. In the book FARMER BOY, the meals discussed were rare.

My mother’s family were sharecroppers. She said they would have starved to death if not for biscuits and gravy.

Much of the time these travellers did not just eat what what they carried but also would forage what they could along the way. They foraged greens, roots, birds eggs, fruit, fish and animals.

Growing up as a son of a long haul truck driver, I could always tell when the Teamster's Union was on strike, because we'd have pinto beans & corn bread for several days ....
It's unbelievable but I still love pinto beans .... 😊
