This is REAL food. Im not Black, but growing up in a poor white family, you enjoyed these same good meals. They filled your belly, and kept body and soul together. I still cook a lot of these same things, and am glad for the knowledge.

I was born in Virginia in the 40's. My grandmother and mother passed down this knowledge to me and my sisters about cooking. I still cook like this today. I am grateful 🙏 ❤😊

Sitting here crying!!! My mom died at 93 1/2 July 2019. She was born in Sharon Mississippi migrated early 50’s … I had every last dish! I miss her so much . But she could , Miss Willie Make WATER TASTE GOOD! Jesus I thank you for all . We Made❤❤❤❤❤ it

Many of these meals were born out of necessity during slavery. Slaves were given the unused parts of the animals for food. Whatever could be found in the fields or woods were gathered up to make a meal. These meals were a lifeline. Most consider these to be struggle meals, but I find some to be comfort meals. My mother always told me that a pot of beans will go a long way. It may not be what you want, but you will not go hungry. As it turned out, beans are one of my favorite meals......bean soup, beans and rice, bean tacos, bean egg foo young and the list goes on. I haven't met a bean that I don’t like. Here's to good eating!

When I taught in New Orleans Public Schools it was in the days that cooks in the cafeteria actually cooked and food wasn't given to kids in cellophane. The cooks, like the kids, were mostly Black. They and the teachers were served greens and ham over rice, wonderful gumbo, baked chicken I could never duplicate, super flavorful red beans and rice, cobblers to die for, on and on. The outstanding trademark was the concentrated flavors they managed to produce. Most of this was Black heritage and let me tell you those sisters knew what they were doing in a kitchen. I know we've got Black doctors and lawyers, football stars, gifted musicians and all kinds of professionals, but before anyone reminds me of that obvious fact let me say that those women were indeed SKILLED and their praises should be sung. Kids now days get processed food simply warmed in a microwave, if that. What a loss.
