I like the Bar-A / Goldee's method where you cook them nekkid then put a glaze on them and wrap in foil to rest for an hour. Had the best results with that these days.

hard to cook what you like versus pleasing the people. I prefer more smoke, and unwrapped ribs, but most people that have my ribs prefer the wrapped ribs. Less smoke and a bit more "fall offy"

I know the possible combinations are huge, but one category worth exploring is wrapping <b>after</b> you are done cooking. This really increases tenderness, but doesn't "steam" the meat.

For my direct heat cooks I just use the lower rack on my WSM without the water bowl. Easy!

You really should try some of the rub options from Lane's BBQ. Really fresh and authentic. All without using salt and or sugar as their number 1 or number 2 ingredients in their rubs.
