I worked as a line chef in a small award-winning Japanese restaurant, and would often watch the sushi chef at work on my breaks. This video is the training and explanation I had always needed, and I see where a few of my mistakes were when I tried to make sushi and sashimi at home. Each step is so important, from the rice, to nori, to the preparation of the fish, and you explained this patiently like a true master.

I agree with the other comments below. This has been THE MOST comprehensive video about sushi I have seen!. Thank you so much. You are truly talented. You should hold classes! I would go! PS: I have messed up my sushi rice several times, can you make a video on rice?

For your reference, seaweed is originated from Korea. Seaweed originated around 1640 in Korea and Japanese people consumed seaweed far later than Koreans

Thanks for the great video. I’m going into Cambridge today and I’m going to be buying the ingredients needed to give my first sushi attempt a try. This is something I have wanted to do for a long time and today is the day!
