Convent Eggs. I'll be having Nun of that unless Mother Superior makes it and if I like it, it could become a Habit 😂.
Thanks for the recipe Brother Rik

I'm Australian, in my old but wonderful Presbyterian Cook Book published first in 1895 they have an Eggs au gratin recipe which is the basically the same except it has anchovy or bloater paste and some cheese with the eggs and white sauce. Same cooking method to Rik's. I'm sure there are many variations. My dear mum, born 1929 made white sauce every time she wanted to serve left overs. I remember stirring the sauce for her as a very young kid. I'd stand up on a chair to reach the stove.
My dad was a rural Dr back in the days before Medicare and he never charged patients who couldn't afford it. They would give him fish, eggs or rabbits full of buck shot or home grown vegetables to thank him. This was a way mum would use up eggs given to us. She fed 6 of us with home cooked meals every single day. With my invaluable help,of course. RIP mum and dad. Thanks for the memories Rik.

In Finland we haven''t forgotten this. We usually eat this with boiled potatoes and fried fish.

57 and not heard of these before - just goes to show that our dear Rik can teach us something new every day. Even when I haven't heard of something, I still love these old British recipes.

I like how you have a bit of toast with your butter.

I remember my mom serving this to us but she called it creamed eggs on toast. It was very good for how simple it is. I'm going to have to bring back some good memories and make a batch. Thanks Rik

"A little touch of Worcester" improves almost everything! Another classic but forgotten English dish.....it makes me sad when I regularly hear 'we never had a cuisine'.....just look at all the wonderful dishes in early 1900's recipe books - or find some restaurant menu's from that time....a lot more variety on offer than nowadays. Keep up the great videos!
