  When curry cooks talk about ‘splitting’, they usually mean reaching the fry stage: the paste has reduced enough that it stops simmering in water and starts frying in fat, and you see oil/fat separate at the edges. In an emulsified sauce, ‘split’ is a failure. In many curry bases, it’s the doneness cue that the masala/rempah has been properly cooked.

  I can honestly say that Joshua's Khao Soi seems acceptable for home cooking, although adding lime while cooking wouldn't be necessary at all considering how limes are typically being used right when the dish is being served.

  One of my favourite video's is where Gordon Ramsay makes "pad Thai" for the head chef at London's Blue Elephant restaurant. I'd love to see James review it (if he hasn't done already).

  Pickled mustard greens are one of my favorite snacks/condiments. It goes so well with many noodle dishes!<br><br>Also, seeing those lime wedges in the soup is such a pet peeve of mine. I don’t like fishing it out and then getting broth all over my fingers squeezing them. Just serve it on a saucer on the side, presentation be damned, haha!

  That would be for the same reason that Looney Toons used classic music. &nbsp;Royalty free. No way to get a strike. Narly bits. Joshua learning from Jamie.

And also, we didn&apos;t slice the shallots into thin pieces. We cut it into chunks because we need the texture and flavor of raw shallots.
