  A small tip for everyone that will see this. Since we are talking about oregano , let me take the opportunity and say that in Lakonia Greece we use it in another way. We take it fresh (before it is dried up) , boil it for 5-10 min to remove the bitterness (taste it to make sure) , remove the moisture for 30 min (spread it on a piece of cloth) and we use it as a herb in meat in the oven for example. Put it from the start of coocking , not at the end. You will not believe how good it tastes in this form. It is totally different taste than the dry one. A MUST try. Make a lot , dry it up well , divide it in small portions in bags and you can store it in the freezer compartment for many , many months. Chef try this and you will be mind blown. Amazing , unique taste. You can use it veggie dishes as well. Or oven potatoes etc.
