    I am a neapolitan pizza chef, who sometimes makes bread as well. For me the reason number one the bread is dense even if it has had a proper prooving, is low hydration. She didn&apos;t mention in her video what hydration she used to make either of the breads she showed. Good chance is, it was 60% of the flour or less. A nice and airy internal structure requires higher hydration, from 65% and higher. I personally prefer 70% cooked at 200° Celsious for 25 to 30 minutes, (without forgetting to place a small pot of hot water in the oven beneath the bread).<br> When kneading the bread when all the flour has been added, it is sticky to work with. Do not absolutely add any extra dusting flour. Rather fold the dough roughfly on itself 3 to 4 times, oiling your hands a bit. Then leave the dough on the surfice for 10 minutes. Then do the same process of giving some folds to the dough again for 5 minutes then leave it. This time it will be a lot more relaxed to work with. Then do it one more time and leave to rest for another 5 minutes. Give some folds again to make a nice and smooth doughball. &nbsp;Now leave it to rise fully for as long as it takes. When it&apos;s really nice and high, then bake it.

    So what I&apos;m hearing is my dough is too dense because I may not be letting it proof long enough in an appropriately warm environment. Or I&apos;m proofing it too long. Or I&apos;m under-kneading it. Or I&apos;m over-kneading it. Alrighty then.

    Hey everybody <br>It&apos;s really nice of her trying to help us all bake bread the best she can. No one is perfect but we must thank her at least for teaching us somethings we may have missed in our baking trials. Everyone has their preference in texture &amp; taste &amp; it&apos;s perfectly normal.     Dense bread is good but so is the fluffy one. All bread is good. Wooden spoon microphones are also good.
