    I'm Japanese and used to live in London for 5 years. There is one important point that was not covered in this matcha episode: the hardness of water. Water in Japan, in most parts, is very soft whereas the one in many parts of England is hard. Soft water is necessary to extract ample umami and other flavors from matcha. This rule applies to other Japanese dishes, even simple soups and steamed rice.

    I tried MATCHA Latte in FRANCE WITHOUT sugar and got hooked.  Now I am making my own matcha.

    I am 69½ years old. I&apos;ve been drinking grade AA Matcha tea daily (1 level teaspoon once a day in room temperature water) for more than 6 months now. At this stage I can report the following:<br><br>1) I have more energy<br>2) My blood pressure normalized after years of high blood pressure readings<br>3) My appetite has decreased - food portion sizes are half of what it used to be. I simply cannot consume more<br>4) I sleep better - used to wake up several times at night<br>5) My regular brain fog is gone<br>6) A small positive change in my eye sight also occurred - don&apos;t know if it is related to my Matcha tea consumption.<br><br>I&apos;ve decided to drink Matcha tea until I pass on as a result of the findings above. My body certainly likes and responds well to it.❤🇿🇦

    Interesting fact—cow’s milk can actually block the absorption of polyphenols in matcha green tea due to its casein content. On the other hand, soya milk doesn’t have this effect, so it’s a better plant-based option if you want to get the full antioxidant benefits of matcha.

    Really love how you explained the importance of water quality! Most people don’t realize how much it affects the flavor and health benefits of matcha. Soft water truly brings out that smooth umami — just like in Japan.

    I just started drinking matcha and found it interesting that I could feel the fatigue lift. I was even more surprised to discover it does not interfere with my sleep, which was a point mentioned in the first few seconds of this video.

    I would not drink anything at Starbuck&apos;s be it coffee or matcha. <br><br>The coffee is crap, reasonable to assume the same is true of the matcha.

    Two points based on advice from Ippodo &nbsp;tea house- you shough sift you matcha to get rid of lups, the bamboo wisk for daily use should have 100 prongs, 70 for occasional use and should &nbsp;be wet for 30vsec never plastic. Before use. For one serving, two scoop per 100ml or 2.5 teaspons should be use. If you make koicha, less water to matcha should be use to achieve think tea. Matcha can be drunk as thin or thick

    Great episode, but important correction: Chef Kojima clearly uses ~1g of matcha per serving, yet Tim Spector’s nutritional comparisons (fiber, protein, fats) are based on 10g—10x the actual dose. This exaggerates matcha’s nutritional benefits vs. coffee. Would be great to clarify that for accuracy.
