Lecter respected Clarice and Barney becauase they were polite and respectful to him - he never went after either of them when he was free because of this. He also was still helpful to people that he liked as he was genius level, just suffered PTSD from being forced to eat his sister during his teenage years. He eats the "free range rude" as he referred to it to Barney.

Also, when he escapes, this was something Barney anticipated would happen. During the 6 years Barney worked with Hannibal, the only incidents (like the nurse getting attacked) happened on days Barney was off. Barney never screwed up like others did.

Hannibal’s moral code is rather simple: he prefers to eat the rude.
The nurse was rude to him. She lost an eye.
The orderly we met was always polite to him. He never got scratched.

In the novel, it says that Barney used to read the paper with Hannibal at night.

Crawford telling Starling that he wont forget how much she helped in the case IS professional.

Hannibal hates rudeness, disrespectful behavior, and discourtesy as a rule, also rapists and child killers but that goes for most murderers in general.

 Fun fact:

The person who plays the character Buffalo Bill in this movie also plays the police Captain Detective in the television show Monk. He is a fantastic actor.

I worked in a Detroit Area Prison for 25 years. We had a dedicated shower specifically for staff who didn't duck quick enough when convicts threw bodily fluids (or whatever) on them. It's also stocked with antibacterial soaps and clean sweat suits to change into.

 45:00
“Walk out of the house. Call for back up.”
Yes. What so many cops do. Let that girl in the well get shot, and make a note of it in their report.
This is what sets Clarice Starling apart from most Law Enforcement officers. She doesn’t let the lamb die.
“Courage is not the absence of fear. It is proceeding in the face of fear.”

This is the definition of a horror movie. The actors were superb, and the horror was mostly from the situations, not the violence.

You're not the first reactor to hear Hanibal Lecter referred to as, "...the psychiatrist, Hannibal Lecter.", only to ask, less than five minutes later, "Is he a psychiatrist?"
Tedious, very tedious.
