You can hear and feel the respect that these guys have for the people they buy from, for each other, for the food, and for the customer. It’s so refreshing to see normal guys doing something they love and have a passion for.

This is best of someone doing hard work for making good product for people not for getting awards or recognition when they get it is like ya ok we love what we are doing and if we get award it is fine.

That thinly sliced congeal beef tendon is basically the same thing as head cheese cold cuts in Vietnam or the Chinese cold cuts plate that is served during wedding ceremonies.

The foundation of great food is simplicity, and making great Italian cuisine doesn’t need a lot of the fancy ingredients, nor the gastronomic techniques, just good cooking.
