These two are outside of the range of the average homeowner in price, but the Kalamazoo certainly is a piece of art as well, extraordinary. My experience of cooking with water baths is they work better over a much longer time frame when the fat has had ample time to render. Possibly why you achieved a slightly drier cook in the Kalamazoo.

I am using Konnected Joe for 10 days. I like so much that it ignites charcoal itself and blows necessary t. It takes like 5 minutes of my time to make steak with it, the rest grill does itself!

If the water pan was not put in I bet the bark would have been a lot closer between them. I use it for long cooks to prevent the bark from becoming jerky texture. <br><br>Can’t afford either of these but the Kamado would be the one I would pick because I can flip burgers on that one easier than pulling out a tray for quicker meals. <br><br>Maybe for a slow cook video do pork butt?
