    Max Miller is great, he&apos;s not a bad cook, and he recreates recipes as faithfully as possible. He also shares historical trivia surrounding the dish! I think learning about the history of dishes helps you appreciate them more.

    A lot of people forget that things like potatoes and tomatoes come from the Americas. You can even draw a line across Europe and everything above will primarily have potatoes and everything below it will have tomatoes. That&apos;s mainly because of how easy it was to grow them in said regions. So things like shepherd&apos;s pie or any kind of red sauce we think of as &apos;Italian&apos; wouldn&apos;t exist the way we know them to be today without the Americas. Also, potatoes and tomatoes were seen as &apos;undesirable&apos; since potatoes were seen as dirty because they were harvested from the ground and tomatoes were seen as dangerous because of their relationship to nightshade. So when you think of modern pizzas, ragu, bolognese, or anything like that wouldn&apos;t exist the way they are today without the Americas. So if an Italian pushes the idea that tradition dictates a certain type of tomato, they are exaggerating a bit. They haven&apos;t had tomatoes for hundreds and definitely not thousands of years so the kinds of tomatoes are still pretty new.

    Re: week old pizza, notice that the book says it can replace ship biscuits. That tells me it&apos;s a plain disc of dough. It seems pizza at the time may not have been baked with the toppings already on. Perhaps they were only added when the pizza was sold?

    The thing about the lazzaroni pizzas of Naples is that they weren’t like the margherita pizzas we know. Think of it more like a flatbread with whatever was available on top, so some days it could be tomato slices, some days it was bacon or cheap meats, and others it was fish.<br><br>Eventually pizza, and especially tomato pizza became popular with the poor of Naples and began to evolve into something like the modern margherita we know and love today with fresh crushed tomatoes, cheese, and basil obtained from local farms.<br><br>From there, Italian immigrants, the vast vast vast majority of which from Naples and the former Kingdom of Two Sicillies in the poorer south, brought pizza to the United States, changing it to adapt to their new situation, changing fresh crushed tomatoes for canned tomatoes which were much more widely available, adding herbs and spices creating tomato sauce as we know it, replacing higher moisture Italian mozzarella with the more shelf stable low moisture mozzarella available in the states, creating a plethora of American pizzas which exploded in popularity throughout the early 20th century becoming an iconic and well known dish all over the states by WWII. Then once WWII ended pizza began to spread back into Italy and Europe thanks to rapidly growing American influence.
