My CELR-12 just arrived yesterday. I can't wait to get some meat projects going and cheese too. I've been watching your videos for 5 years and have only made fresh sausages, but now it's time to try all of your dry curing projects. Thanks Eric and I'll let you know how it goes. 😋👍

Yep, I'm going to get one. Its the versatility for me that is the selling point. The fact that I can do several different things with the one unit is just phenomenal.

I haven't looked through all your videos but have you made some Dominican Salami & Longaniza or similar. Can't wait to try your recipes in my Celr-12 when it arrives.

I bought one. I did have an issue but the customer service was great. Im using a 50 qt weize cooler. I put a sensor push ht1 humidity and temperature sensor in it. The humidity and temperature readings i get are pretty much identical to what the screen says. Ive currently got a ribroast dry aging its been going almost a month now. Unit is quiet and seems to work great.

I got one with your discount code. Received it last week. I ordered it about 10 days ago and expected it to take a few weeks to arrive because the tablesmith website said they build to order and lead time is typically 2 weeks. So I did not have anything ready when it arrived. However next day off I cured some meat, and just today put in a spicy copa with calabrian chili powder and a pancetta Tess with the sweet Calabrian chili powder. We will find out in a few weeks how I did.

I'm just getting into curing meats, and the small form factor is much easier to sell to my girlfriend. Love it. Great review.<br><br>Edit: Ah, unfortunately they don't ship to Canada...<br><br>Edit 2: I messaged the company and it seems they can accomodate international shipping, just need to arrange with them directly.<br><br>edit 3: I just bought one! Can't wait.<br><br>Edit 4: 500$ of import fees. Just a warning...

You never did a final review of TSM's Dry Curing Chamber, then again it isn't on their web site any more so I don't know if it is even still available. That being said, this seems to be 1/4 to 1/5th the price. The experience with humidity was very helpful as I'm probably in an even dryer area then you (inch less precipitation and we'd be a desert). I'll probably pick one up, compared to every other "curing chamber" this is cheap enough that it's a minimal risk, especially as I keep trying so many different things that just using it as a proofing box is not bad. <br><br>More great info from you, thank you very much. BTW, do you not do freezer meals any more? Those were some great recipes.
