Japan stays slim not because rice and noodles are “magic,” but because their entire lifestyle keeps total calories low and insulin sensitivity high: portions are small, people walk constantly, sugar and processed foods are minimal, meals are balanced and low processed‑fat (seed oils, etc), snacking is rare, and cultural norms reinforce staying lean. The carbs aren’t the overall issue, which are bad over time, no doubt but the overall environment prevents overeating and keeps metabolism efficient. When compared to the USA, most foods are highly processed, lots of added chemicals, pesticides and preservatives which all lead to diabetes, obesity and heart disease, This is why America is so overweight and Japan is so thin and have the longest life spans overall.

Fresh food, reasonable portions and combined together to provide a balanced meal. Most of all perhaps, cooked with care and creativity, all in a quiet atmosphere without distraction. It's like conducting an orchestra. Every tie I see food on your channel -- especially the meals you cook -- I feel compelled to raid the fridge, whatever the hour!

We have cherry blossoms here in Wales as well, they were brought here by a Japanese visitor, the Japanese people who live around here, come to visit them, when they are in bloom.

I have only seen a few of your videos, I haven't seen you drive a car. Maybe it is all the walking that is helping Japanese people stay slim? I am now trying to learn how to make miso soup and trying natto, and shakshuka for weight loss. Good luck on your journey Rin.

Hi Rin that's what I call a three course meal, my breakfast is lemon green tea, two slices of seeded brown bread with cottage cheese and a bowl of bran flakes with semi skimmed milk and fresh orange juice.
