The reason why Demoman's eye didn't grow back is because his eye socket is haunted by an evil spirit named Monoculus, which showed up after he was hired to clean a wizard's house for a wizard and he unwisely decided to peek in a book known as the Bombinomicon. He CAN get his eye regenerated, but then every Halloween or full moon, the spirit possesses his eye, causes it to pop out of his head, grow to an enormous size, and go around blowing everything up.

Oh, and said wizard, Merasmus, was Soldier's roommate, has gotten in trouble with the Russian mafia and the Yakuza, and built an enormous carnival for the purpose of summoning an ancient Sumerian clown god. And somehow this resulted in Soldier being able to pass the bar exam.

TF2 being mostly PvP and Helldivers being entirely PvE means there are a few differences, especially in the fact that the different classes counter eachother in a way that isn’t necessary for Helldivers. Spies can disable Engineer machines, Pyros can check for enemy Spies (because there’s no friendly fire), etc.

One of my favorite aspects was that Spy’s disguise only works on the enemy team. His own team members see him as a regular Spy with a paper mask of the enemy class he’s disguised as. It led to a trend of cosplayers dressed as Spy to sneak into group photos of cosplayers from other franchises with a mask of a character from that series.

Soldier started off quoting Sun Tzu, went into a rant about Tzu inventing fighting, confused him with Noah, and became convinced people call it a Tzu (Zoo) in Tzu’s honor.

Spy is that diver that insists on stealth when no one else is, and either barely does anything but die, or disappears within a minute and suddenly all the objectives on the opposite side of the map get cleared and all the samples are collected.

Looking through this comment section, the lore really does sound like the fans are just making stuff up, but its real.

The TF2 Soldier, the Medic and the Pyro are canonically clinically insane. The Soldier, only known named "Jane Doe", is a semi-literate ultra-patriotic gun-nut who lives off army rations in his barricaded apartment, but his shameful secret is: He is actually a civilian! Just don't ever mention that to him! As the Lore goes, as a young man Jane Doe wanted to enlist in the US military during World War 2 (as TF2's main timeline is set in 1968-1973) to "fight Nazis and Communists"[1]. But he was rejected by every branch of the US military because he was diagnosed as homicidally insane.

So Jane Doe built himself a rocket launcher out of scrap metal from dumpsters, fashioned grenades out of old empty soup cans, got an Army helmet and a shotgun and shipped himself off to Europe... where he arrived in 1945(!) in Poland and started his One Man Army rampage to "kill Nazis". It took until 1949 until someone managed to get the message to the madman that the war was long over. So Soldier went back to "America!" and fashioned heroic medals for himself out of soda bottle caps (yep, that's canon) and got several wooden soldier cutouts (those used for shooting practice) as his "army buddies" he talks to when camping in the field.

In the comics, Soldiers also mentioned once ein passing that he had been to Guam, where he was... an ordained priest, if I remember right? Soldier has had a lot of weird jobs, in various places where the USA in our timeline committed war crimes...
The Administrator hired Soldier because he asks no questions, his brain is damaged from drinking water with lead in it, but he very good at shooting stuff. And people. And whatever gremlins exist in his head.

Honestly, the TF2 mercs would all qualify as sociopaths in our world, and Sniper and Spy are literally assassins for hire. And Medic once lured a would-be robber who tthought he could mug the "elderly German tourist" into a dark alley on Halloween and stole the street thug's brain and put it into a hollowed-out Jack o'Lanteren pumpkin and kept it alive in there to spook kids.
Also, Medic canonically made a soul pact with the Devil (it runs in his family, they are all "Mad Scientists, Crazed Doctors, and Warlocks" according to the Two Cities Update), then stole the souls of the remaining eight mercenaries of the Team Fortress Classic team (those crusty old evil b*ggers), and when he got fatally shot tricked the Devil and convinced him to send him back to Earth alive and with 50 more years of life.

But in their universe, the TF2 mercs are far from the worst people. Saxton Hale and the Adminstrator have done far more evil things. The TF2 mercs would for a start never hurt animals or kids, and in one of thte comics the BLU teams saved kids from the evil Australian equivalent of Santa Claus who wanted to abduct children to his sweatshops at the South Pole. Yep, that is 100% canon lore. Look it up.
-------------
[1] (Although Soldier barely knew what that means, he equates "pinko Commies" with "Hippies" and other people who "need a haircut" in his voicelines.)

In defense of the engineer, his introduction doesnt include his other important features. He not only builds turrets, but he also builds dispensers that can supply and heal teammates, and teleporters to help the team move to the front more efficiently.
The analogy is a little tough, but maybe less "Oops all turrets" and more like "yeah he brought the gattling and rocket sentry, but also a supply pack and FRV." And he actually shares the snacks and can drive more than 20 feet without flipping the thing.
