  Ben, We used to race these way back when. Had dozens of them! The Bosch fuel injection system is actually a very simple, extremely reliable system. I don't know if anyone has mentioned in the comments on the Audi and now this GTI but we found that every engine we worked on or that we collected from parts cars had very similar symptoms to what you are experiencing on both the Audi and the GTI. Eventually we found that the absolute first thing we had to do was to replace the "Donut" seals that held the injectors in their mounting seats. Invariably they were hard, often cracked and caused all manner of cylinder mixture issues. It only takes a few minutes and considering the age of these projects I'm positive these "Donuts" have failed long ago! While you're at it I would suggest that you pull all four injectors (Leaving them connected to the fuel lines) and put each in an identical  container. Cans or jars are good here but secure them because the fuel sprays with some force!  Remove the air intake boot from the Bosch unit, turn on your fuel pump and use a magnet on the bolt in the middle of the plate and lift it for ten seconds or so. Each injector should supply the same amount of fuel. It's a very simple check on these older mechanical systems. I saw that you had people with experience with these systems offering advice on both videos but unless I missed them I didn't see a comment about these. Bosch had great technical manuals on these systems that explained them well. I haven't used them in years but I still have a drawer in one of my boxes dedicated to these Bosch CIS systems. Here in the US they were known as the "Continuous Injection System" in Europe known as the "K-Jetronic". Thanks Ben for allowing me to reminisce...

  I am kid from the 80es in Germany, when we got our driving licenses in the 2000s everybody got a Golf mk2 (well except you only got a Polo). We all wanted a GTI, but no one actually had one. Please make this baby perfect, it's an icon!

  The MK.2 Golf GTI is my dream car. I have always loved this Golf I've always wanted to own one but they have always been out of my reach. Thanks for saving this one Ben you're a total legend

  Condolences to Chris and his family. I grew up with this age VW. My dad had the MK1 and MK2 Jetta. Amazing cars that stood the test of time.
