Chicken over wood fire. One of my fondest memories was a joint just up the street fro Hussong's in Ensedada.Chicken on a huge rotiserie over smoldering wood, while ladies made fresh tortillas on a comal nearby. So much smoke in the air my eyes almost watered along with my mouth! 40 years ago and the flavor is still clear as day!
