8 Freezer to Oven Dinners for Seniors — No Thawing, No Chopping

The freezer is full and dinner still feels impossible. Everything in there is hard as a brick, and nothing was taken out this morning. Tonight nothing gets thawed and nothing gets chopped: eight dinners, every one of them into the dish frozen solid and straight from the bag. Stuffed shells you never stuffed, a shrimp bake that takes fifteen minutes, drumsticks that go in frozen and come out sticky, and a shepherd's pie whose lid went on frozen in lumps. FROZEN STUFFED SHELLS 6 frozen stuffed shells (12) • ½ jar pasta sauce (1 whole 24 oz) • 1 cup mozzarella (2) • 1 tsp Italian seasoning (2). Sauce on the bottom, shells in FROZEN and OPEN SIDE UP, rest of the sauce over and round them, cheese on. 375°F, 40 min covered, 10 uncovered. 👉 Secret: open side up is the whole trick — a shell turned over empties its filling into the sauce. No stuffed shells — frozen manicotti, same time. 2. CHICKEN AND BROCCOLI CHEESE BAKE 2 frozen chicken breasts (4) • 1 cup frozen broccoli (2) • 1 can cream of chicken soup (2) • ½ cup milk (1) • 1 cup shredded cheddar (2). Frozen breasts in, soup and milk stirred smooth and poured over, broccoli ROUND THE EDGES not on top. 375°F, 40 min covered, cheese on, 10 uncovered. 👉 Secret: broccoli on top sits in the steam and goes grey; round the edges it roasts in the sauce and keeps its colour. No breasts — frozen thighs, 10 min more. 3. GREEN BEAN CASSEROLE WITH CHICKEN 2 cups frozen cut green beans (4) • 2 frozen chicken breasts (4) • 1 can cream of mushroom soup (2) • ½ cup milk (1) • ½ cup crispy fried onions (1). Breasts in, soup and milk over, beans round them. 375°F, 40 min covered; onions on, 10 more uncovered. 👉 Secret: onions go on in the LAST TEN MINUTES — under the foil they go soft, and soft is the one thing they must not be. Making it for two? Do not double the onions; spread half a cup wide instead of piling a cup up. 4. GARLIC BUTTER SHRIMP BAKE ½ lb frozen peeled shrimp (1 lb) • 2 tbsp butter in pieces (4) • 1 tsp garlic powder (2) • 1 cup frozen green beans (2) • ½ lemon (1). Everything in frozen, butter dotted over, lemon squeezed across. 400°F, UNCOVERED, 15 minutes. 👉 Secret: this is the one dish where you stay in the kitchen — shrimp go from perfect to rubber in about three minutes. Out the moment they turn pink and curl. 5. BARBECUE DRUMSTICKS 4 frozen chicken drumsticks (8) • ½ cup barbecue sauce (1) • 1 tsp garlic powder (2). Frozen drumsticks spaced apart, seasoning over. 400°F, uncovered, 45 min. Out, brush the sauce over every one, back in for 10. 👉 Secret: THE SAUCE GOES ON AT THE END. Barbecue sauce is mostly sugar, and sugar in a hot oven for an hour turns black long before the chicken is done. 6. BAKED ZITI WITH FROZEN MEATBALLS 1 cup dry ziti (2) • 6 frozen meatballs (12) • 1 jar pasta sauce, 24 oz (2) • 1 cup water (2) • 1 cup mozzarella (2). Dry ziti in, sauce and water over, stir once, meatballs pushed down into it. Foil, 375°F, 50 min; cheese on, 10 more. 👉 Secret: THE CUP OF WATER IS NOT OPTIONAL — dry pasta drinks it while it bakes, and without it the sauce dries to paste and the ziti stays hard. 7. ⭐ SHEPHERD'S PIE FROM THE FREEZER 1 cup frozen meatballs cut in half (2) • 1 cup frozen mixed vegetables (2) • 1 packet brown gravy mix (2) • 1 cup hot water (2) • 2 cups frozen mashed potato pieces (4) • ½ cup cheddar (1). Meatballs and vegetables in, gravy stirred smooth and poured over, potato pieces laid over the whole top. Foil, 375°F, 40 min; cheddar on, 20 more. 👉 Secret: cover the top RIGHT OUT TO THE EDGES — gaps let the gravy boil up over the potato, and instead of a lid you get a brown puddle. 8. BEEF TIPS AND GRAVY ½ lb frozen beef tips (1 lb) • 1 packet brown gravy mix (2) • 1½ cups hot water (3) • 1 cup frozen sliced onions (2) • 2 cups frozen mashed potato pieces (4). Beef and onions in, gravy poured over level with the beef. Foil, 325°F, 1½ HOURS. Potato pieces along one side, covered, 20 more. 👉 Secret: LOW AND LONG is the whole thing. The same beef at 400°F for 40 minutes comes out grey and tight; at 325°F for an hour and a half it comes apart under a fork. Let it stand 5 minutes so the gravy thickens.
