Rest 5 min. #2 BBQ CHICKEN AND POTATO BAKE – Serves 2 2 chicken thighs • 2 potatoes, diced, skins on • BBQ sauce Potatoes with oil on the pan, chicken on top, brush with sauce. 400°F about 40 min, second coat of sauce halfway through. #3 POOR MAN'S MEAT AND POTATOES – Serves 2 1/2 lb ground beef • 1/2 packet onion soup mix • 2 potatoes, sliced thin • 1 cup water Brown the beef, stir in the soup mix, add potatoes and water. Lid on, simmer about 20 min. Taste before salting. #4 HAM AND POTATO CHEESE BAKE – Serves 2 2 potatoes, sliced thin • 1 cup diced ham • 1 1/2 cups shredded cheese • 1/3 cup milk poured over Layer potatoes, ham, cheese, repeat. Foil on, 375°F for 45 min, foil off last 15. Rest 10 min. #5 SAUSAGE AND PEPPERS SKILLET – Serves 2 2 sausage links • 2 bell peppers, sliced • 1 onion, sliced Brown sausage first, cook peppers and onions slowly 10-12 min in the same pan, return sausage 5 min. On a roll or over rice. #6 FARMER'S EGG SKILLET – Serves 2 2 potatoes, diced small • 3-4 breakfast sausages, sliced • 3 eggs Brown potatoes about 10 min, add sausage 5 min, make wells, crack in the eggs. Lid on, low, 3-4 min till the whites set. #7 CREAMY TOMATO TORTELLINI – Serves 2 1 package refrigerated cheese tortellini • 1 jar tomato sauce • 1/3 cup cream Boil tortellini till they float. Warm sauce, stir in cream till it turns rosy, toss the tortellini in with a splash of pasta water. #8 PORK CHOPS WITH APPLES – Serves 2 2 pork chops • 2 apples, sliced • 1 onion, sliced Brown chops 3 min per side, set aside. Cook apples and onion in the same buttery pan till golden, return chops on top. Lid on, low, 10 min. #9 BAKED SPAGHETTI – Serves 2 (makes extra) 1/2 lb spaghetti • 1 jar pasta sauce • 2 cups shredded cheese Boil pasta 1 min short, mix with sauce and half the cheese, into a dish, rest of the cheese on top. 375°F for 20 min. Rest 5 min. #10 CHICKEN ALFREDO NOODLES – Serves 2 2 cups cooked shredded chicken (rotisserie) • egg noodles • 1 jar alfredo sauce + splash of milk Warm chicken with sauce on low – never boil it.
