Sheet Pan Meatballs in Marinara 🍽️ FULL RECIPES (4 servings, leftovers reheat beautifully) 1. SHEET PAN CHICKEN PARMESAN 4 thin chicken cutlets • 1 jar marinara • 2 cups shredded mozzarella • 1 cup breadcrumbs. Cutlets well apart, press the crumbs on dry, no egg and no flour. 400°F 15 min. Marinara over each, mozzarella on top, back in 8 min. 👉 Secret: SAUCE ON THE CHICKEN ONLY, never on the tray. Sauce on the metal steams, and steam turns crumbs soft. 2. SHEET PAN SAUSAGE, PEPPERS AND ONIONS 1 lb smoked sausage • 3 bell peppers • 2 onions. Sausage in coins ON THE DIAGONAL, peppers in wide strips, onions in wedges. Oil, salt, pepper, tossed on the tray. 425°F 25 min, one shake halfway. 👉 Secret: the ANGLED CUT gives twice as much flat surface on the hot metal, and that is where browning happens. Straight coins sit on their edge and stay pale. 3. SHEET PAN HAM STEAK WITH PINEAPPLE 1 ham steak (1 lb) • 1 can pineapple rings • 2 sweet potatoes. Sweet potato in rounds, 400°F 20 min alone. Push to the sides, ham in the middle, pineapple on top, juice from the can over. Back in 15 min. 👉 Secret: THE JUICE FROM THE CAN IS THE WHOLE GLAZE. It has sugar in it already and cooks down sticky over both. 4. SHEET PAN CHICKEN FAJITAS 2 lb chicken breast in strips • 3 bell peppers • 2 onions • 1 packet fajita seasoning • tortillas. All on the tray, oil, the whole packet, tossed until orange. 425°F 20 min. 👉 Secret: in the LAST TWO MINUTES lay the tortillas on top of the chicken. They warm in the steam and go soft, and you dirty nothing else. 5. SHEET PAN COD WITH LEMON BUTTER 4 cod fillets • 1 lb green beans • 4 tbsp butter • 1 lemon. Beans on the tray first, 400°F 10 min alone. Push to the edges, cod down the middle, butter coins along the fish, lemon over. Back in 12 min. 👉 Secret: THE BEANS GO IN FIRST. Fish needs twelve minutes and beans need twenty two, so ten minutes apart makes them finish together. 6. SHEET PAN MINI MEATLOAVES 2 lb ground beef • 1 egg • 1 cup breadcrumbs • ½ cup ketchup • 1½ lb potatoes. Mix beef, egg and crumbs, shape EIGHT small loaves on one half. Potatoes halved cut side down on the other. Ketchup over each. 400°F 30 min. 👉 Secret: SMALL LOAVES, NOT ONE BIG ONE. A full size meatloaf takes an hour and a quarter; palm sized ones take thirty and brown all over. 7. SHEET PAN PORK CHOPS WITH APPLES 4 bone-in pork chops • 3 apples • 2 onions • 1 lb small potatoes. Potatoes halved, onions and apples in thick wedges with the SKIN ON. All on the tray, chops on top. 400°F 30 min. 👉 Secret: SKIN ON AND CUT THICK. A peeled apple collapses into sauce in thirty minutes; a thick wedge with its skin holds its shape and goes soft inside. 8. SHEET PAN RANCH CHICKEN DRUMSTICKS 8 chicken drumsticks • 2 packets dry ranch seasoning • 1½ lb small potatoes. Potatoes halved with oil and one packet. Drumsticks STRAIGHT ON TOP of them, oiled, second packet over. 425°F 40 min, turn nothing. 👉 Secret: DRUMSTICKS ON TOP, NOT BESIDE. Everything the skin renders lands on the potatoes, and they taste roasted in chicken fat, because they were. 9. ⭐ SHEET PAN STEAK BITES AND POTATOES 2 lb sirloin tips in big cubes • 1½ lb potatoes • 4 tbsp butter • 4 cloves garlic. Potatoes halved, 450°F 15 min alone. Push over, steak cubes down DRIED WITH A PAPER TOWEL and seasoned hard. Back in 8 min. Butter and garlic onto the hot tray at once. 👉 Secret: THE BUTTER GOES ON THE TRAY, NOT IN THE OVEN. Garlic at 450°F burns black in three minutes; on the hot tray it goes sweet in the melting butter. 10. SHEET PAN MEATBALLS IN MARINARA 1 bag frozen meatballs • 1 jar marinara • 2 cups shredded mozzarella. Frozen meatballs straight onto the tray, no thawing. Whole jar over, shake until covered. 400°F 25 min. Mozzarella over, back in 8 min. 👉 Secret: FROZEN STRAIGHT FROM THE BAG is the better way, not a shortcut. A thawed meatball sits in its own water and thins the sauce; a frozen one keeps it thick. Tell me in the comments, do you cook mostly for yourself these days, or is there somebody else at the table?
