My uncle had a smokehouse till he died in 1971. I remember the most wonderful sausage that he made. The smokehouse wasn't close to the house and he and his wife did not socialize much or sell any pork. He rendered lard, made wine, and for a long time they heated and cooked with wood, had fruit trees and grew vegetables.
