2 of the root vegetables I enthusiastically grew when I started my homestead 3.5 years ago. The first was yacon but it didn't do well. On the other hand, I merely started with 2 sunchokes tubers the first year and got about 30lbs of sunchokes. I ate some and grew the rest. The second year I got 70lbs. The third year I got about 400+lbs. This year, I had way too many so did not keep track but merely kept them in the soil for food security. I have 4 large dedicated rows for them now. I uploaded a video of my sunchoke plot if you want to see. A word of caution is to not eat them fresh but cure them properly like you would with a yam or potato. It will sweeten it and also reduce the gas. If you eat them the moment they're dug up, expect uncomfortable release of gas for several hours. I cure mine for at least 2 weeks before consumption but 4 weeks for the failproof window.

Parboil them with a tablespoon of baking soda, mash with egg, then bread with Italian bread crumbs and fry. No "farts".

My grandfather had a wall of Jerusalem, artichokes cross the back of his farm. He put a barrier4 1/2 feet deep around them and didn’t have a problem with them growing out of the boundary. He told me if you plant one you’ll never to plant again. No one else wanted to eat them but we love them. Every time I make them I think of him.

My Dad grew some "Jerusalem Artichokes" one year, on the North side of his garage, where not much else would grow. They grew, thrived actually, and all the plants grew taller than me. I was probably close to six feet tall that year. They definitely had a 'sunflower' looking leaf, and had smallish yellow blooms. I can remember eating some of the tubers, and they compared favorably to potatoes in both taste and texture.

I"m pretty sure when Monsanto patented one year only soybeans, and prosecuted anyone who "cleaned seeds" for future planting of non-Monsanto seeds, that things had devolved into insanity. We're now in the final stages of that insanity before the big change comes.

I used to put my Sun Chokes through a meat grinder and mixed it with ground beef to make a meatloaf. It was very good and my mother enjoyed it also.
