With my mince, I usually add a tin of brown lentils for extra protein and to stretch the meat.

For corn and tuna cakes you could sub for oat flour using the oats you purchased, new sub here, its nice to see australian content/context!

You can grate carrot and add it to your oats.with cinnamon, microwave it for a few minutes then you have carrot cake oats with extra nutrition from the veg and they are more filling. Nice with a drizzle of maple syrup.

I always make use of my freezer to store items with volatile and/or expensive prices, like capsicums. If you are going to be cooking them and not eating them fresh, chop them into strips or a small dice and freeze them with onions. A single capsicum can cost over $1 and they go off quickly. Use in burritos/taco mince, chilli, cheesesteaks, etc. Also things like homemade pesto (use dried sourdough crumbs instead of pine nuts for amazing flavour) is cheap, freezes well, and can be used for pasta sauce, dipping sauce, over vegetables, to flavour skewers, etc. I make one with roasted red capsicum, pecorino, breadcrumbs, garlic, about 1/3 bunch basil and salt and pepper. I also pad out mashed potato with sauteed cabbage and some garlic (colcannon), it makes a huge volume and is very cost effective.

Hi, I’ve been watching your videos lately but this is the first comment I’ve left. I loved this video and I’ll be making some recipes from it especially the corn fritters. Taken notes for all the new lunch ideas. I need to be having cottage cheese for the extra calcium but short on ideas how to use it. You’ve given me plenty of ideas, thank you! And yes please if you ever want to do one of these challenges again🥰

I think you did an awesome job with those ingredients making them not too repetitive with different combinations plus spices. I liked the look of all the meals you made. I have made corn fritters lots of times over the years but I have never included tuna in them. That could be a new version to try out for sure. I, too, appreciated that you presented this from the Australian perspective because our prices for foods are so much higher for a lot of items. Thank you. 😀
