I eat Costco steaks 3-4 times a week. I buy the slabs, cut, seal and, freeze just like you guys were learning. My wife and I got this down to a science and we love it.

Our local meat market, if you buy the whole strip loin/rib loin/tenderloin, they will cut it into steaks for you and whatever they trim off you get back in ground chuck. Best deal I've found other than buying a 1/2 of freezer beef.

Using the trimmed fat to make beef tallow is an option as well so it's not entirely wasted. One slab might yield like a 12-16 oz jar. Fun video.
