  This isn’t the correct way to think about the The Danger Zone, this is food after being plated in a clean container. Once packaged, the hot food will of course continue to cool to ambient temperature until the moment you eat it or place in the fridge. If you were going to go around checking temps, it should have been from the pot he platted your food FROM, not into.
