Use cornstarch with a little bit of baking powder. Absolutely perfect.

When using baking powder..important to use Aluminum Free to avoid a metallic taste

throw all the pointy bits (useless for eating) into a BIG bag and freeze them, when the bag is full throw them in a pot with herbs etc and make stock
