Thank you very much for this. Our late son cooked this for us about a year before he passed away. He was an adventurous cook and loved cooking for others. I have his recipe-you’ve inspired me to make it. Thanks for inspiring yet another precious memory of our precious young man.

An Italian sous chef that I used to work with introduced me to osso buco 20yrs ago. I’ve always made it with veal shanks and white wine. Risotto is what I’ve served it over. Since I use beef shanks for other dishes I’ll have to try your version. I love braised dishes.

I have a very difficult time adding mushrooms to any dish. I find when I’ve finished chopping them I’ve already eaten the ones I chopped first. There are so few left it doesn’t seem to make sense to add them to the pot, so I just eat those too 😂

That is what I always use for my Mexican caldo. Not necessary to cut for tender meat, however, pre-boil for about 1 1/2 to 2 hours for melt in your mouth tenderness. ❤
