I think it's because there's so much butter in the bag it diluted the flavor of the steak. The flavor and salt gets absorbed by the butter like boiling a steak. In other Sous Videos, he found that putting liguids with steaks dilutes the flavor.

So on OG SE, everything was recorded at Guga's old web development office. The younger guy, MauMau, is Guga's cousin. "Ninja" is their co-worker. Ninja eventually went and did his own channel called Salty Tales before Guga moved his videos to his house in late 2019.

Guga has done experiments with adding fats to the Sous vide and it has consistently resulted in the non-fat added being better.

Guga has been over this many times, if you Sous Vide things with to much extra liquid it acutely pulls more liquids from the food so you wash out the flavor. (nothing to do with masking the flavor, just less flavor.)

That's why they do compound butters to test extra flavors now instead of putting liquids in with Sous Vide.
