What I started doing is I got a $60 dollar meat grinder, whole brisket for $5.49 a pound and used that. Meat to fat ratio is about right and unlike packaged ground beef, it isn't around 20% water added.

We are fortunate to have a meat market that grinds it when you order, coarse then a bowl grinder.

I may have to buy a manual grinder. I like the idea of buying chuck roll, but driving to Costco and a membership gets expensive. I can extract a few steaks, a roast or two, then grind the rest. And then there's sausage.
