You can put the bagged salmon in the freezer for 1/2 hour before sealing and it holds it's shape much better if you can't adjust the vacuum pressure.

Necroposting, but worth mentioning. Once you have cooked your salmon to your desired doneness, you don't absolutely have to sear it. If you or someone you love has difficulty chewing or swallowing food, sous vide salmon is a great reminder that you don't have to sacrifice flavor for soft, delicious fish. It's much more flavorful than poaching. A few lemon slices, maybe a sprig or two of tarragon, dill, or parsley, and a few pats of butter in that sous vide bag is juicy perfection.

Please do fry oil test for chicken wings. Use beef tallow, coconut oil, and canola oil or any other oils and see which gives wings better taste!!

Guga, I just made this Salmon. I torch seared rather than oil. Best salmon I've ever had in my life, my guests were pleased and now expect this level of food every time. Thanks!<br>-Joaquin

Guga is the guy ! Just got a sous vide and searched and BOOM first vid I watched. I have a HUGE smile on my face biggest one in a month or more, what a wonderful personality this man has and boy can he cook. I love him XOXO, the world would be a better place with more Guga's. This is 5 years old hope he is still happy and enthusiastic. :-)

I'm VERY new to sous vide and today I made the salmon (131 degrees for 1 hour) & it was delicious!! I 'browned" it on the outdoor grill for about 2m per side - perfect. I made the "hot salmon sauce" (but, added garlic) and it was also delicious!!!! TY! TY!!!
