  Plum is a valid ingredient for North-East Indian biryanis (e.g. Kolkata biryani). So is the inclusion of potato along with meat. Apart of overcooking the rice, Rinku did a pretty good job with it.<br>Edit: Plum is an Indian thing. It&apos;s called &quot;alu bokhra&quot;.

  Even us Chinese living in Singapore/Malaysia grew up side by side with Indians and Malays with our neighbours and friends making heart warming Biryani. And the rare treat to be able to have Dum Biryani before it gets SOLD OUT before lunch.

  I&apos;ve watched several epicurious chef levels... And level 3 Pro always goes off the rails and level 1 takes weird short cuts.
