Not to mention Dooku was never truly fully committed to the dark side.

Dooku grew weaker with age because he did not retain his Maia powers, which he had in a previous life.

I always thought it was because Sidious complete and utterly embraced the Dark Side and in Legends it was mentioned he was the only person to "tame" the Dark Side other than Exar Kun, where as Dooku only used it when needed

I always felt Dooku wasnt really a true, blue believer in the dark side. Unlike Sidious, Dooku believed the dark side was a means to an end (freedom from the Jedi dogma, freedom to change the Republic to something more Authoritarian), and not an end to itself

Dooku turned to the darkside around 80 years old! Palpatine was around 30 years younger than him during the Clone Wars. Darkside degrades your body faster. Even during ROTJ, Palpatine was still younger than Dooku during ROTS!

This must be the reason why the sith is so obsessed with immortality

I also think a part of Dooku just refused to let himself FULLY give himself to the dark side. He could never shake his old jedi discipline (Although he did dabble in the dark side even as a jedi). Oh he was certainly an evil dark sider through and through by the end of his life, but its kind of like he refused to become fully one with it. Its funny though since the Light side actually kept him young, heck he had no grey hair and moved like a 20 year old even at 70

My guess:

Palpatine was using the same dark side he had always used, so he became ever more abundantly evil the more he grew into it, and the more he developed & matured in evil. Evil was his native element.

Dooku, OTOH, having been a very powerful user of the light side, was doing something deeply unnatural to him in embracing the dark side; so the more he grew into it, the weaker he became. Evil was not his native element; the light, was.

I think it also has to deal with the fact that Dooku didn’t use the dark side that much. His body aged just by turning his hair and beard white which is normal. He never truly embraced the dark side. If he did, he would have had SITH eyes. By only taking a small sample of the dark side he grew weaker, but he used the dark side more often, he may have not grew weaker

1:59 I think it explains why by the time of the original series Palpatine had gone pretty much insane and not thinking about his immediate surroundings or even common sense like watching a very closely to Luke Skywalker, but not paying attention to Darth Vader or building the second death star after the first one was destroyed and put yourself as bait for a trap so you can personally watch the rebellion failed

Aside from his age, Dooku was conflicted about how things were going during the Clone Wars along with the things he had done. He wanted the Jedi to be free from their dogma and what he saw as their enslavement to the Republic, but so many of them had died and turned to the dark side during the Clone Wars, along with him having taken the lives of more than a few of them. He justified it to himself by seeing the dark side and everything he was doing as a means to an end, but it was undoubtedly eating away at him and helping to degrade his body even further because of how he wasn't fully committed to the dark side. What he never realized was that, to Palpatine, he was a means to an end himself and a disposable pawn when the time was right.
