I cry every time Mitsuha opens her hand to see Taki’s name, only to see “I love you”.

anime is just a medium to tell stories, just like movies that can cater to many genre. sometimes it even works better as a suspension of reality to convey a story.

Fun fact: the reason that the messages disappeared but the "I love You" did not is because in Japanese folklore, all messages of love are protected by the moon god.

The reason they remembered despite their memories fading after they alter the timeline is due to Mitsuha's red ribbon: The Red Ribbon of Fate that in japanese and chinese culture says that to people attached to it are destined to be together no matter what.

"Anime" has a bit of a tiered circular meaning and it can be a bit confusing to explain, but bottom line is that in English, the term "anime" is used to mean "Japanese cartoon/animation."

Full meaning:
"Anime," in Japanese, is short for "animēshon", which is a loanword from English, obviously derived from "animation." In Japanese, anything that is animated, cartoon or otherwise, is called anime. It's a common occurrence for Japanese to shorten words, especially when it comes to loanwords. For instance "sandwich" is "sandoicchi" in Japanese and is frequently shortened to "sando."

In English, the word "anime" is loaned from the shortened Japanese word "anime," and is defined as any animation originating from Japan.

So Japan borrowed "animation" and shortened it to "anime," then English borrowed back the shortened word "anime."

The reason Taki and Mitsuha lose their memories of each other after their twilight meeting is because in order for Taki to enter the shrine, which is the underworld, and undo the timelines to save Mitsuha, he was required to leave something of himself behind.
The thing most precious and dear to him. That precious thing he left behind was their memories of each other.
So when twilight ended and Taki and Mitsuha were sent back to their own timelines, their memories of each other immediately faded, and time and fate were undone to make way for a new one. But, by writing "l love you" on Mitsuha's hand instead of his name, the moon god protected their hearts. In Japanese folklore, the moon god protects all messages of love and is not bound by the laws of fate or time. So they forgot the experiences they went through with each other, their faces, and even their names, but not the feelings they had for that person. The love they had in their hearts remained there. Even though they could no longer remember who the person they loved was, they knew they loved someone, and that that person loved them too

I've seen a lot of people react to this movie and a lot of them seem confused at the end at the part where the main characters are at the stairs and don't say anything to each other as they walk by. This is because at this point, they pretty much have lost all memories of eachother. They're basically starting over as strangers.

In an another movie that came out after this, I believe it was "Weathering With You", we see Mitsuha for a brief moment selling jewelry and in the novel of the same name, a character visits an apartment where they find wedding photos of Taki and Mitsuha.
So yes, they did live happily ever after.

You'd have noticed that the notes in Taki's diary were being erased when he started to realise Itomori was destroyed. Taki realised that Musubi would not permit names to be remembered across timelines and wrote the infamous "I Love You" on Mitsuha's hand, but Tsukiyomi, the moon deity, protects feelings, which they sensed when near each other on the bridge and on the trains.

Bit of trivia, the name of the Italian restaurant Taki works at translates to "The Garden of Words", which was Shinkai's other film. A common trait of his is to drop Easter eggs, subtle connections between his movies - the name of the restaurant is one where he connects Mitsuha's teacher in Itomori to that film. Weathering With You, another movie also by Shinkai will have many connections to Your Name. That was also a visual treat and worth a watch. The connections/references are subtle, but there if you are observant.

There was a Japanese TV show that had a segment about this movie not long after its release as they noticed its popularity among the older generation keeping it in the movie charts (despite the film being marketed to young adults/teens). They invited some older folks to a special screening and placed cameras in the movie theatre towards the audience, then interviewed the people afterwards. Needless to say, many of the old folks were in tears, and noted that the "red string of fate" (aka musubi, symbolised in this movie with Mitsuha's ribbon and the dream sequence at the shrine) which is prevalent in Eastern oriental cultures was something they experienced in their own lives - like an invisible bond - some people said they met their spouse/soulmate or found something they were looking for.
Someone has uploaded that segment of the show and added subtitles for us - https://www.youtube.com/watch?v=gTsafIFkxTs
