Im 48 years old and a retired chef. I am disabled because of my years working myself to pieces trying to prove that I was bigger and better than the cooks to my left and right. My cervical spine is compromised and I wear three leg braces as I try to go back to college at 48 to become a dietitian. All I can say is always put yourself before the craft. If you put the work before your own well-being you will always pay the price.

What's crazy is that a lot of the body (and psychological) harm that comes from working so hard can be greatly reduced by routinely taking (relatively) short breaks in between the hustle. However, we are conditioned by society into believing that such moments of respite are signs of weakness and laziness, while in reality the opposite is often true.

Nearly 41 myself and your words really resonate with me after leaving the professional scene in Los Angeles back in 2013 for all the burnout and coming to my scenes seeing fine dining for what a back ass sh!t show it was becoming. Long story short..went back to my first job in the golf industry where I manage turf everyday outside lol. Living the dream and you said something in a video about how so many traits and the work ethic ingrained from years during my formative years spent in the kitchens..100% I benefited from. Literally its a 1:1 no doubt. You should write book on it..there's plenty left on the bone on the topic.

Got out of the industry at 33 after 10 years, began having leg issues that were actually hip/back issues. The skills i learned are absolutely invaluable when it came to choosing a new career. I had a lot of doubts as to why I spent a whole decade in the kitchen industry. But just like you said, there are definitely a lot of skills for us to gain during our time in the industry.

I bought my house at age 36 without a mortgage (after years working flat out as a chef). Shortly after that, i got out of the kitchen for 7 years and did other work. Now, im back in the kitchen, but i do a 4 day week and i don't do any evenings, i do breakfast and lunch. I really like the early mornings and finishing early.

I wish I could have visited your restaurant. You have a wonderful manner, and I'm sure you've guided many young people with such sober advice.
