    The resistant starch point is the detail most people miss — cooling cooked sweet potatoes retrogrades some of the starch, so more of it resists digestion and the same meal produces a noticeably smaller glucose spike. I'd be curious whether the effect needs a full 12–24 hour chill like the potato studies suggest, or if sweet potatoes behave differently there. Either way, this is a good case for prepping them the night before.

    I STEAM my sweet potatoes for 10 minutes and leave it in the pot to cool.  Then refrigerate it and eat it the next day with protein, green leafy vegetables and nuts.

    Microwave sweet potato will keep resistant starch.  It will lower glucose absorption by 30%.  But not 100%.
