Yes I am from Lucknow. Apart from food ,Lucknow is the city where urdu language was born. This city is also the birthplace of Chikankari work which is embroidery all done by hands. And today it's among the top law and order maintaining states in India .

Lovely to see you marvel at Urdu in Lucknow. Urdu itself emerged in medieval North India, particularly around Delhi, under names such as Hindavi, Hindui, Dehlavi and Rekhta, before flourishing as a refined literary language in Lucknow and elsewhere. Its presence in Lucknow is therefore not an aberration but a splendid continuation of a long and fascinating linguistic history.

In most of UP and even in Lucknow, paanipuri ko golgappa bhi kehte hain. The real batasha is the sweet white sugar batasha as you rightly pointed out.
