On 18 November 1883 the railroads reset every clock in the country, and some towns had noon twice. On the high plains of Kansas, a family paid for its sugar with butter at 10 cents a pound, filed on 160 acres for $18, and burned dried cow chips from a pile 12 feet high. Out here a Harvey supper on linen and china was served to a whole train in 30 minutes, and a stranger could buy half a bed for the night. It sounds strange now, but every custom made perfect sense.
