By 11 o'clock the last carriage had gone, and the family climbed the great staircase to bed in the glow of a triumph. Below the stairs, about 20 servants were only beginning their night. A formal Gilded Age dinner ran to 8 or 9 courses, and every course left its own plates and silver, so hundreds of pieces had to be washed and counted by hand before anyone could rest. A housemaid earned around $18 a month; a single grand dinner of the era could cost $50,000. And the girl who scrubbed the pots, in bed past midnight, had to be awake by 5 to light the fire again.
