Bonito basics: The smallest member of the tuna family has been much maligned over the years because of its strong flavor if not handled properly after being caught. Although this may not be practical on a cattle boat, always bleed out your freshly caught bonito and place it under ice IMMEDIATELY after being caught. Once you get home, carefully cut off all of the blood meat. Slice into sahimi-sized pieces and serve with shoyu and wasabi ....if you like, enjoy it with a cold glass of good California sake! ;-)

Bonito is a bit softer than blue/ yellowfin.. can be seared. I tend to marinate and bake then make a version of tuna salad.

Soak your Bonito fillets in Milk for 15 min then season it with some blackening seasoning mix, so bomb, the milk will take a lot of the fishyness taste out of it..
