Here is how I keep mine fresh for 8 months, using a system I have been running for years in my Welsh garden. This video covers everything. From preparing a sharp sand bed and mixing the compost columns, to sowing Sweet Candle carrots two seeds at a time, thinning correctly so you never disturb the root you want to keep, and protecting the crop from carrot fly with insect mesh from day one.
