Seeing you actually climb into position for the thumbnail at the end was the perfect way to finish this. What makes that image ridiculous is that the video behind it is completely real—you grew an absurd amount of food and then spent the week experimenting with ways to make sure it didn't go to waste. The cucumber-juice pickle experiment alone would have made an interesting video, but you went from there to mushrooms, tomatillos, daikon and tomatoes, showing several completely different preservation methods along the way. That's an impressive amount of growing, experimenting, cooking and production packed into twenty minutes.<br><br>— Ken

Nothing prepares you for mid-September when every single plant decides to drop 10 kilos of produce all at once. My counter looks like a science lab right now with all the airlocks bubbling awaaaay

Learning how to succession plant was a game-changer for me. Instead of planting 12 cucumber plants at once, plant 4 cucumber plants every 4 weeks, 3 times. The end result is still 12 plants, but the harvests get staggered so you can use them more efficiently. You’ll get the same production, but better utilization all for the same or less work.<br><br>It has really helped me get more out of my garden and use more produce. I employ this methodology with almost everything now.

Another way to make tomato paste and use your freeze dryer. <br>Slice your tomatoes and lay them single layer on the freeze dryer trays. Freeze dry and powder. Now take some of the tomato powder and a little water, voila tomato paste. <br>By the way tomato powder is great as a umami bomb and as a thickener. So make your bolognese without the tomato paste and add a few tablespoons of tomato powder instead.
