I think one obvious sign that theres more to Weirwoods is that their stumps are still around, even a thousand years after being cut down.

Trees being chopped down but the magic remaining can be explained if the Weirwoods are one large organism, or several connected, where the majority of it is underground. The root system is still there, so the magic continues.

It should probably be acknowledged that to some degree this is Martin's ideas on the weirwoods evolving & him changing his mind as the story grew. Cat's knowledge of the world being incomplete is one thing, her omitting the tree in the castle she grew up in is anorher.

So. In my long experience I've done a decent amount of field work in Pedology (soil science), Dendrology (tree science) and woodland Ecology in general. The concept of old-growth trees forming a long-lasting underground root network in places where soils have not been catastrophically disturbed by extensive agriculture or other anthropogenic means is fairly well understood. There are many published works on the symbiotic relationships with trees and soil microbiology, most especially mycological (fungal) relationships, which create huge networks that exchanges nutrients and biochemical 'information' between species. The stumps of trees that have fallen 'naturally' (through old age, fire and/or severe wind damage), or by being cut while leaving stumps, continue these relationships long after the above-ground parts of the trees have died or broken off, as long as the soils are undisturbed. Martin seems to have some knowledge of this ecological phenomenon, which has always been gratifying to this old woodsman while reading about the Weirwoods in his ASOIAF canon. It's in the soil where the 'magic' resides, with the Weirwoods being a emergent above-ground manifestation of the ancient networks.

IRL, trees can re-grow from stumps if the roots are still there, so the Weirwood trees' stumps still having magic makes perfect sense.

Reminder that cutting a tree down often doesn't kill it. Trees are even bigger below the ground than they are above it
