  The difference is the Dutch Processed Cocoa Powder. &nbsp;It was not an equal comparison, since the Dutch processed cocoa powder will give your product a more chocolatey flavour.

  The difference in chocolate taste comes from the different types you used. Dutch chocolate has a much stronger chocolate flavor that impacts everything made with it.

  The DUTCH PROCESS gives more chocolate flavor and less bitterness. Over 50 yrs of baking. Always go for the DUTCH PROCESS. We love your challenges 💪

  I suspect most of the difference in taste came from the sugar. Golden sugar is quite different from white sugar. So different in fact I wouldn&apos;t call it cheap vs steep, but two completely different ingredients. White sugar is almost pure sucrose, while golden/brown sugar also contains &nbsp;molasses. That&apos;s where the caramel taste comes from.

  For the weird chocolate chip weight, given that it&apos;s a US brand it is probably a direct conversion from one of their standard US sizes (and looking it up, they do sell some of their stuff in 11.5oz bags, which is 325g).

  chocolate cake needs to be made &nbsp;with Dutch processed cocoa. I bet the steep one would be marvellous with the right kind of cocoa or with baking soda as a leavener I started yelling at the screen as soon as I realized the mistake.
