  Old Southern cook here. I recommend not refrigerating the food inside the baking/ serving dishes. It throws cooking times off something horrible. And even though you leave the dish out to warm up a bit (starting the clock on bacterial growth!) you risk thermal shock putting your refrigerated casserole into a preheated oven. Just refrigerate the “innards” of your casserole in a separate vessel (I use stainless steel bowls but I have two refrigerators!) and put it into your casserole dish just before cooking (adjusting the cooking time to reflect refrigerator-cold food).

  My favourite part of Thanksgiving dinner is the stuffing.  I cook the turkey neck, gizzard, liver, and heart in water to create a stock liquid.  Cool and chop, and then add to the stuffing ingredients with some stock liquid, mix and drizzle with some juices from the roasting turkey and I could eat that every single day for the rest of my life.

  I do a lot of my prep work a week ahead, chopping the veggies, making the cornbread/ bread all dried out and chopped, all the pies, cakes etc. into the freezer.The day before I assemble everything, put into the refrigerator. Day of its all ready to pop in the oven. I find that I enjoy the day so much more than my grandmother and mother. A plus is the clean up is pretty much done also.

  As a Southern born lady &nbsp;I grew up calling it &amp; STILL call it stuffing, if cooked inside the bird, &amp; dressing when it&apos;s cooked outside of the bird!
