  I can potatoes all the time and have never had a problem with sludgy starch, but I never Russets - only Yukon Gold. Our favorite recipe is the herbed potatoes from the Ball book - chunks canned in chicken broth with herbs. They are delicious drained and roasted quickly until crispy; and they make the most delicious mashed or potato soup!

  You explained the science so well in your previous dry canning video, that I couldn't even be tempted yo dry can despite seeing very convincing videos to the contrary. Bless you for arming all of us with scientific knowledge so we can make better informed decisions!🙏🕊

  I do 20 pounds at a time. Change the water 3x and allow them to soak overnight in clean water. Then can . Zero starch and I use russets

  My mother and dad moved a box three different times before we finally opened it and it was mustard pickles about 10 years old. My dad said they were the best mustard pickles ever

  Thanks for revisiting potato canning.  My earlier results from canning potatoes left me quite unhappy with the end product, so I’m going to give it another go after watching your video.  Thanks to you Pam and Jim for all the time you invest in teaching us.

  Love canned potatoes, especially Yukon Gold.  Added bonus:  less starch means the potatoes do not stick to the skillet as bad when you make fried potatoes.  YUM!  Thank you for another amazing video!
